Organic, 600m altitude, on calcareous breccia - sedimentary rock made up of angular pieces of limestone held together in rock-hard matrix of finer elements. Harvested by hand.

One week maceration on skins, subsequent fermetation completed in stainless steel.
Spontaneous fermentation, no additions bar a little SO2.
