Bodegas Barbadillo, Espumoso de Albariza 'Toto', Andalucia, Spain

A fascinating sparkling wine from one of the great historic names of Andalucía. Toto is made from Palomino Fina with Chardonnay, grown in the white albariza soils of the Jerez Superior vineyards. The base wine ferments in temperature-controlled stainless steel before undergoing a second fermentation in bottle using the traditional method and spending around 20 months ageing on its lees.  With no sugar added at disgorgement, this is a properly dry Brut Nature.

Pale and bright with fine bubbles, it combines fresh citrus and orchard fruit with subtle yeast, bread and mineral notes. Crisp, dry and savoury, with that distinctive chalky Jerez character running through the finish. Brilliant with oysters, seafood, sushi or salty tapas.
